When expelled from Nova Scotia by the British in the 1700s, the French Acadian farmers settled around Lafayette, a region of 22 parishes that would come to be known as Acadiana. Their descendants, commonly called Cajuns, still speak a French dialect and observe the traditions of their ancestors. Like gumbo, the staple of Cajun cuisine, Acadiana has become a melting pot of cultures. French is still the dominant influence, with traces of Spanish, African, Native American, German and English.

NATIONAL PARKAngelina National Forest Angelina National Forest surrounds Sam Rayburn Reservoir in East Texas, off US 69 east of Lufkin. The forest's 153,179 acres encompass fragments of the “Pineywoods” region, which was heavily logged early in the 20th century. Towering pines and hardwoods have returned, sheltering deer, squirrels and occasional turkeys.
NATIONAL PARKArkansas Post National Memorial On SR 169, 7 miles south of Gillett along the lower Arkansas River, the Arkansas Post National Memorial occupies 389 acres. Erected as a fort by the French in 1686, Arkansas Post was the first permanent European settlement in the lower Mississippi Valley. Ownership passed to Spain 1765-1800, then briefly reverted to France. With the Louisiana Purchase, the post became a frontier village.
